I strive to elaborate a unique menu for each event. A menu that will fit to your taste and most important that will surprise you and your guests. By mixing my sushi training with my experience as a French chef it results in a unique fine dining experience in your home comfort.
Only the best ingredients are used: from the premium sushi rice Koshihikari from Niigata (Japan) seasoned with a secret recipe of sushi vinegar to the highest quality of seafood from local fishermen, Tasmania, New Zealand and Japan.

About me: from France to Melbourne
I am Arnaud and I have two passions in life: the ocean and cooking.
I grew up in a small town on the coast of Normandy, where I used to spend my free time either at the sea or cooking. At 19 years old, after six months at university I realized that engineering would not be my career and so I took a life changing decision: to integrate the Paul Bocuse Institute and study Culinary Arts and Restaurant Management.
After improving my cooking techniques in a Michelin starred restaurant, I moved to Bordeaux, where I joined a traditional Omakase style sushi restaurant. I worked close to the Chef, Yugo Ishikawa from Tokyo, who taught me all about the art of sushi. A new world opened to me and even though it was a different culture and skills, I found an incredible respect for the products and traditions as in my education. I knew that I will eventually become a sushi chef.
I created Uminono to offer you a unique experience with a different sushi omakase and teach you the essential sushi skills during the Japanese cooking classes at your place in Melbourne.
